Couscous Salad


1 cup Couscous
2 cups Water
2 Tomatoes
1 Carrot
1 Small Onion
1 Green, red or yellow Pepper
1 Tbsp Fresh Mint
1/2 tsp Salt
1/2 tsp Pepper
1 clove Garlic
2 Tbsp Fresh Parsley
1/3 cup Balsamic Vinegar
1/3 cup Raisins or/and boiled Chickpeas


1. Put couscous in a bowl, pour over two cups of boiling water and cover  for 10 minutes. Fluff with a fork and allow to cool.
2. Cut  tomatoes, onion and  pepper into cubes. Chop  fresh mint, carrot and parsley. Crush garlic .
3. Combine together and add to couscous.
4. Sprinkle salt ,pepper and add balsamic vinegar.
5. Refrigerate for 1 hour.
6. Add raisins or/and boiled chickpeas before serving.
