Chocolate Quinoa Cake

Ingredients

Serves: 10 persons

• 1 cup Quinoa, rinsed    250 ml
• 2 cups Apple juice    500 ml
• 3/4 cup  Butter/Oil    180 ml
• 2/3 cup  Cacao powder    160 ml
• 3/4 cup Agave syrup    180 ml
• 3/4 cup Pure honey    180 ml
• 1 tsp Pure vanilla extract    5 ml
• 1½ cup Soy milk    375 ml
• 3 Eggs    
• 2 cups Quinoa flour    500 ml
• 1 cup White flour    250 ml
• 1 tsp Baking powder    5 ml
• 1 tsp Sea salt    5 ml
• 1/3 cup Grounded Walnuts or  Almonds     80 ml

Directions

1. Preheat oven to 163°C.
2. Rinse quinoa for one minute.
3. Drain in a medium-sized sauce pan, add the apple juice.
4. Reduce heat to a simmer and cook, cover for 20 minutes or wait until juice is absorbed.
5. Remove from oven, fluff with a fork and set aside.
6. Combine butter, cacao, agave syrup, honey, vanilla, eggs and mix together.
7. Mix flours, baking powder, salt and nuts with soy milk, stirr by hand until well combined.
8. Fold in cooled quinoa and spread butter into a greased or lined baking pan.
9. Bake 35 minutes or until toothpick inserted comes out clean.
10. Remove from oven and cool completely before icing.
