Chocolate Coconut Mint Custard


Serves: 4-6

• 40g wholegrain rice
• 3 eggs
• 30g cocoa powder (unsweetened)
• 25 g honey
• 395ml coconut milk warmed
• 120ml yogurt, warmed
• Fresh Mint Leaves
• Chocolate Curls


Preheat oven to 160℃

In a large bowl, mix the rice, eggs, cocoa powder, honey,& coconut until well blended

Stir in warm coconut milk & yogurt. Transfer to an oiled casserole dish

Bake for 45 min

Garnish each serving with mint & chocolate curl
